Deacon John is a tribute to John Weeks (1757-1821), who lived in our farmhouse and was a deacon in the local church. Its process pays homage to how American colonialists made cider. A blend of bittersharp, bittersweet, and sharp apples, it was fermented then aged on its lees in a single barrel for six months. Twenty-two cases made.
